The BushRumCo takes the flavours of the Caribbean and brings them to life by blending Guyaneserumwith tropical fruits and spices to create a range of spicedrumwith flavours that are bright, refreshing and subtly sweet. The company’s Steve Dustow heard about plans for a sea buckthorn plantation in Cornwall, but had to wait years for the plants to grow before he could trial them in a spirit. Like many homes and businesses on Dominca, Macoucherie Distillery was virtually destroyed by Hurricane Maria in 2017, but is back producing rum from sugar cane using a hydro-powered press.
I left Dominica with a bottle of Macoucherie and plenty of ideas to recreate my own Bush Rum back in the States. Cuban rum is deliberately designed to be lighter in style than some of the more robust Caribbean rums, and this makes it perfect for a classic daiquiri.
Ron Zacapa brings together a blend of different rums aged between six and 23 years old, giving a dry spice note alongside a decidedly mature oaky flavour.
It’s one of the many, many uncommon things to be found on the utterly uncommon island of Montserrat. Willock said that in collaboration with local manufacturers his new Bush Rum Factory brand will offer seven different rums. The grapes used to make the 2019 Bacchus were sourced from Poulton Hill Vineyard in Gloucestershire. It carries a wonderfully bright fresh fruit character with notes of mango, vanilla, toffee and lingering spice.
