Once cooled, unwrap the dough and score a large cross in the middle using a sharp knife. Lift all four corners from the middle of the cross, and then pull them up and out. The meat was really good quality - very savoury and salty, with no nasty gristle or fatty bits, yet still lovely and moist. It had an oniony flavour to it as well and lots of seasoning, making it taste like something you'd get from an artisan deli counter.

This week we've been putting the pasty treats to the test to see how supermarket own brands compare. The baked goods are really quite versatile - you can have them on their own as a savoury treat, enjoy as part of your lunch and of course they make a great addition to any buffet table. Roll the pastry out again a neat rectangle, about 13 cm x 36 cm, always rolling away from you, giving a half turn after each roll and taking care to keep the edges straight. With the folded edge to your left, repeat the folding process (step 8) but do not tap to create the ridges. Wrap in plastic wrap and refrigerate for 20-30 minutes.To make the dough, combine the flour and salt in a large mixing bowl. Add the 25 g diced butter to the flour. With your palms facing upwards, use your fingertips to rub in the butter until the mixture resembles fine breadcrumbs.
