So to replace it with just one specific type of flour… that’s not going to cut it at all. Definitely go for a gluten-free flour blend. Do I need weighing scales to bake your gluten-free Christmas cake? An 8 inch (20cm) loose-bottomed tin is a must. – High-sided and (preferably) spring-form. This is a deep, dense cake which needs to be well supported. This is the one I use. If enough people ask me for a low FODMAP Christmas fruit cake, I’ll gladly whip one up for you! Is your gluten-free Christmas cake recipe nut-free? The alternative to juice is to sub the alcohol with cold brewed tea (without milk obvs…). You can use this to both soak the fruit AND feed the cake as it contains no additional sugar.

You will need an 8in (20cm) loose bottom tin with high sides to it. Here’s a link to the one I use. There’s a big difference between ‘gluten-free plain/self-raising flour’ and a *singular* type gluten-free flour. When I say ‘gluten-free plain or self-raising flour’ in a recipe, I mean a BLEND of gluten-free flours, not just one, singular flour.
