Here are two easy ways to make your own fabulous fire roasted tomatoes at home. Both methods are incredibly easy to do, and need only some olive oil, salt, pepper, sugar and a drizzle of balsamic vinegar. Large regular tomatoes are fine, but can sometimes be too juicy. If they're too juicy, they won't char well. Fire roasting tomatoes is incredibly easy to do. Once you try this out you will never want to buy them again. The taste is just superior to anything you can buy in a can.

I've roasted these in my standard oven and in my toaster oven. The toaster oven is a little faster.

How to Make Fire Roasted Tomatoes

I cannot even begin to describe how good tomatoes are when cooked like this. Yes, you can easily buy a can of fire roasted tomatoes but then you don’t get to play with fire yourself. Where’s the fun it that?

The Smoky flavor also enhances salsas and pico de gallo dishes, giving them a unique taste that will delight your senses.When making fire-roasted tomatoes, you can use different types of tomatoes. Tomatillos, Roma tomatoes, and plum tomatoes are great for grilling. Grape tomatoes are more oblong and slightly tapered, and the bottoms of tomatoes can char much more rapidly that the tops. They're also smaller, and there ends up being more skin than I like in the final dish. Making this on the grill, indoor or outdoor version, is easy to do. However, making these tomatoes in the oven is easy to do as well. I must admit that I do have an abundance of tomatoes acquired this time of the year. This results in a roasted and smoky taste, in addition to bringing out some of their hidden sweetness.

It's completely optional to remove the skins following roasting of any tomatoes larger than cherry tomatoes. I do not remove the skins of cherry tomatoes before serving.

How to Make Fire Roasted Tomatoes

Traditional oven roasting involves cutting the tomato in half and brushing it with oil, followed by roasting in a hot oven for about 20 minutes until browned and tender. I like to use fresh herbs, but if you don't have them you could use 1 ⅓ teaspoons each of dried basil and oregano. Preheat the air fryer to 400˚F. If your air fryer tray is like a wire mesh, line the it with parchment paper. Arrange the tomatoes, cut side up, on the parchment sheet (if using) lined tray. Punch around 20 holes in the parchment paper around the tomatoes and any pooling liquid. I use a skewer to do this. This improves the air circulation around the tomatoes. (See above photo.) Do not lift the lid constantly. Heat escapes that way and affects the temperature. Just the same as when you open your oven door!
