As I have done more and more gluten-free cooking, tamari has become a staple liquid ingredient in my fridge. It is a gluten-free version of soy sauce that we use regularly. Both soy sauce and tamari are high in umami flavor.

Dried Shiitake Mushroom - Mushrooms contain a nucleic acid called guanosine monophosphate (GMP). Dried shiitake mushrooms are a particularly rich source of GMP, with a much higher nucleic acid concentration than fresh shiitakes. If you can't find dried shiitake mushrooms, other dried mushrooms like porcini are another excellent alternative. This Trader Joe’s seasoning definitely lends itself to Mexican dishes, like taco salad, guacamole, tacos and quesadillas. One of our favorite uses is on corn on the cob rubbed with fresh lime. Ranch Seasoning Blend Nutritional yeast is one of the most nutritious ingredients in vegan cooking. It has a nutty, earthy and cheesy taste. It’s different from baker’s yeast and brewer’s yeast because the yeast is inactive. So unlike the yeast in bread or beer, you don’t have to worry about yeast buildup in the gut. Note: I used dried shiitake mushrooms for this recipe, but I've also used a mix of dried mushrooms in the past to make the seasoning blend. Trader Joe's version uses a combination of dried porcini mushrooms and dried white button mushrooms. Feel free to use whatever you can find, or whatever you have on hand.
