About this deal

The dream bite for me was a little shrimp, some of the tomatoes and veggies, and extra sauce all on a piece of baguette bread! The most well known of these is the state of Jaliso, but other regions within Guanajanto, Michoacán, Nayarit and Tamaulipas are also permitted. Much like rum, whisky or gin there are a whole load of tequilas available, covering a number categories and subcategories, that can easily confuse the unprepared. What is the difference between tequila and mezcal?

Perhaps the increasingly popular Paloma? One of the many types of Margarita? Or maybe you’ll plunge an agave spirit into a Negroni, Martini or Old Fashioned in place of their more familiar ingredients? That’s Enrique de Colsa, the Master Distiller for Tequila Don Julio, describing the brand’s second foray into combining those two worlds, Tequila Don Julio Reposado, Double Cask. It’s a limited-edition reposado tequila finished in casks which previously held Lagavulin Islay Single Malt Scotch Whisky. This could easily be a complete dinner, or served as a family style appetizer. How to make Smoked Tequila Lime Shrimp While not every version of Mexico’s most-imbibed spirit is imbued with smoky flavors, the most heavily smoked mezcals garner the most diehard fans. There’s a whiff of danger, there—and a seductively rich scent that can vary from burning herbs, to natural woodfire, to barbecued meats.Tequila is made specifically with blue agave, it’s made by steaming the agave before distilling it in copper pots, and it’s made in different regions of Mexico than mezcal. Place the tequila in a glass jar and keep it in the plastic box that you’ll be filling with smoke. Let the smoke infuse the tequila for about 10 minutes. Another thing to consider is the type of smoker you are using. If you are using a charcoal smoker, you will need to use a higher-proof tequila, as ethanol is a necessary component of the smoke flavor. If you are using an electric smoker, you can use a lower-proof tequila.

The liquid is filled into barrels, where it matures for a minimum of two months. The Tequila is then brought to the desired ABV using water that has been filtered through Mexican silver. Here’s a video tutorial that I love which uses an old coffee maker to make a DIY cold smoker. I have not made this myself, but I think it’s very clever! Its deep amber hue and combination of sweet and charred oak flavours are reminiscent of bourbon, making it an appealing alternative for an Old Fashioned – a drink that is simple enough that you’re still able to detect those subdued agave notes. This tequila is generously priced and well suited to those who want to explore agave flavours in a less in-your-face way than through a blanco.

At this point, you might see how Lone River Ranch Water is the perfect fit for this Smoked Tequila Lime Burnt Ends recipe. I used their original seltzer, made with agave nectar and lime, along with some tequila and lime. Again, the sweet and citrus notes this adds to the burn ends is incredible. It brings a light freshness to the dish that would have been lost otherwise. Taste for seasoning and add more kosher salt or pepper if needed. Serve Smoked Poblano Salsa with chips for dipping or with tacos and quesadillas!

Mezcal not only pre-dates tequila, but all tequila is actually a form of mezcal (and not vice-versa). Like mezcal, tequila is made from the agave plant and double-distilled. Both liquors can also be aged after distillation for various periods of time, or not aged at all. Similarities notwithstanding, mezcal and tequila walk their own separate paths, something that becomes self-evident as soon as you compare the taste. There is no definitive answer to this question as it depends on personal preference. However, some smoky tequilas are considered to be better than others. Patrón is one of tequila’s most recognisable names, being one of the first premium brands to make it to mainstream bars and having a profile boost due to its recent acquisition by Bacardi. Despite this elevation to big league status, it is still very much a hand crafted product, and the range of tequilas it produces is of excellent quality.Reposado (literally meaning ‘rested’) is the next level up and aged for a minimum of two months in oak, up to one year. This extra step means the liquid develops a light golden hue and generally a smoother, more mellow profile. Here you can expect sweeter notes, such as coconut and vanilla. Anejo Although mezcal can be made throughout Mexico, most distillation is centred around Oxacana, and these producers also tend to use a slightly different method that includes roasting the agave in a pit – this lends a distinctive smoky edge to the resulting spirit. What should I look for in a fine tequila?

As the iconic Islay malt, Lagavulin embodies the finest, pungent flavors native to the region,” says de Colsa. Yes, pungent — the Islay whiskies are decidedly bold and smoky. Smoky mezcal is a great choice for those who want to try something a little different. The smoky flavor is a nice change from the traditional mezcal flavor, and it is a great choice for those who want to explore the world of mezcal. The world’s first smoked silver tequila, the creation of the clear liquid was sparked 200 years ago. It is 100% blue agave and its smokiness is achieved solely through channelling the complexity and richness of the environment. Now, let’s talk about part three of the cooking process because that’s where the BBQ sauce comes into play. We’ll pour this BBQ sauce on top of the burnt ends as they finish cooking. What does this BBQ sauce consist of? You can probably guess by now… It’s primary ingredients are tequila, fresh lime juice, agave and the OG Ranch Water. No surprises here, but let me just say this sauce is so freaking delicious! Not only does this sauce add a rich, glossy and caramelized texture to the Smoked Tequila Lime Burnt Ends, but it provides a depth of flavor that’s incredible. Bringing Out Burnt Ends Place the required amount of tequila in a glass bottle. I usually only smoke 1/2 cup at a time if I’m only making it for the two of us.Blanco or silver — call it what you will — but this is your entry-level tequila. If you insist on slamming, this is generally what you’ll want to do it with. Diamond-clear and un-aged, the best examples are fresh and zippy with a citrus spike. Some cheaper bottles will burn, but we’ve bypassed those for small-batch tequilas that are silky smooth. Reposado So, why citrus and tequila? Well, they are both strong in flavor and therefore won’t be drowned out by the bold flavors that inherently come with smoked burnt ends. The citric acid is really what helps cut through the fattiness in the pork belly. Along with that, the semi sweet, slightly earthy flavor of tequila really helps balance out the pork’s saltiness. Burnt Ends and BBQ Sauce Tequila is made exclusively from the blue agave plant, grown primarily in the area surrounding the city of — you guessed it — Tequila, in the western state of Jalisco, Mexico. I'll get more into each piece of this set and why I freaking love it so much. But let’s take this one step at a time. First and foremost, if you’ve never heard of Dobel, you’re probably wondering who the hell they are and if they are worth being on your ‘to-try’ list. Dobel Tequila
