About this deal

Courtly cultures from this time traditionally played around with culinary ingredients that were rich, exclusive and hard to come by. That’s why a dish like Pasanda stands out – it has more ‘finesse’ about it than those rough and hardy ways other bolder dishes were concocted. Indeed, even the word ‘Pasande’ means ‘favourite’ in the Urdu language and this links to the fact that the dish must always be prepared with the finest cuts of goat or lamb meat. Before you give up on making a dish because you do not have a particular ingredient, I would suggest finding a suitable alternative. It’s a blend of a fresh vegetables like onions, peppers, ginger and garlic, chillies (green and red) and ground spices such as curry powder, cumin, turmeric, fenugreek, smoked paprika and ground coriander (you can also use fresh coriander), all cooked together to make up a terrific tasting sauce that can be frozen and used again and again. Serve the rice and peas with the lamb steaks and pasanda sauce. Garnish with the remaining coriander.

Heat a medium frying pan with 1 tsp oil on a medium-high heat. Season the lamb steaks with sea salt and place in the pan. Cook for 3 mins on each side, until golden, then transfer to a plate. Curries ALWAYS taste even better the day after you make them! Make a big batch and keep in the fridge for up to three days. garam masala- you can make your own garam masala, but I buy mine from the grocery store (it's super cheap!). The dish derives from the Urdu word " pasande" meaning " favourite", which refers to the prime cut of meat traditionally used in the recipe. Another theory, which I quite like, is that the name was influenced by the dish’s all round popularity. Traditionally, Indians and Pakistani's would cook this dish to please the whole family, young and old. What is pasanda?
