This beautiful recipe was inspired by Cupcake Jemma, as I had no idea how else to get pretzels into the cupcakes, and I didn’t just want them to be a decoration on top. Melt – In a microwave-safe bowl, melt the chocolate (not including the white chocolate) at 50% microwave power in 30-second increments, until melted, stirring each time. When you ask me how much I like salted caramel, you get what is probably described as my version of puppy dog Eyes… I get a craving as soon as it’s mentioned, and it’s all I then want to eat. I mean, it’s not the end of the world, but I think it’s worth the effort to keep them in a single layer so you end up with consistent, thin chocolate caramel pretzel bars at the end.

Dip pretzel with melted caramel into the chocolates alternating between the white chocolate and milk chocolate. Start by lining your baking sheet (with the silicone baking mat) with an even layer of pretzel twists. You could even drizzle them with white chocolate or green candy melts to make them look extra festive. While some brands of chocolate chips melt well and work fine in this recipe, some brands don’t, as chocolate chips are intended to hold their shape in cookies to look like a “chip”.

Keep caramel pretzels in an airtight container at room temperature layered between parchment paper for about a week. I realise, the only real difference between my salted caramel cupcakes is that they have pretzels added in, but I am okay with that. All we have here is a pretzel rod dipped in caramel, rolled in heath toffee chips and then drizzled in chocolate.
