About this deal

This wonderous whisky is brimming with peppermint, melon, cucumber, yuzu, grapefruit, lemon, thyme and a touch of subtle smoke. This was smooth and had some interesting but rather simple fruity flavours which were enhanced by the mild peatyness. The Hakushu Distillery blenders work with peat, while naturally softening the palate was using the exceptionally pure mountain water of the area, filtered through ancient granite rocks.

This is an unaged expression and is blended by Master Blender Keizo Saji at Suntory's incredible Hakushu Distillery. Although the bottle was not for myself I had chance to try it as it was opened it's pleasantly stronger and deeper in taste and mouthfeel compared to the suntory Toki more of an emphasis on barrel spice but still maintaining the floral notes. The Hakushu Distillery is one of the highest distilleries in the world, standing at 2,300 feet above sea level – more than twice the altitude of Scotland’s highest distillery. It's a concept rich in meaning the world over, but particularly in Japan where respect for tradition and reinvention sparks a powerful creative energy. The colour is golden caramel, and it sits neatly on its own or over ice (I'm not a fan of whisky discs or cubes).

Hakushu is nestled deep in the Mountains of Japan's Southern Alps and with a local water source of exceptional purity the 'house style' shows wonderful freshness and delicate peaty notes. As it glides across the palate, a gentle sweetness emerges, accompanied by vibrant fruity tones and the subtle presence of oak. The Hakushu Distillery was built in 1979 by Shinjiro's son, Keizo Saji, who clearly inherited his father's pioneering spirit! A variety of pot stills and casks are carefully chosen to suit the high elevation and climate of Hakushu, ultimately producing an array of single malt whiskies with a variety of characters that reflect its surroundings. The initial Hakushu distillery came into existence in 1973, followed by the addition of a second facility, Hakushu Higashi (East), in 1981.
